Mashed Maple Pecan Sweet Potatoes
Every Thanksgiving table needs sweet potatoes and mine was definitely not lacking this year.  I know the traditional "casserole" is some sort of overly sweet concoction with marshmallows on top, and in the name of health, this is obviously not that.  It is better.  Creamy, naturally sweet and full flavored mashed sweet potatoes are topped with a crunchy pecan topping and heated to perfection.  You will not miss the marshmallows at all, I promise!!

Mashed Maple Pecan Sweet Potatoes

6 medium sweet potatoes, peeled and cut into chunks
1/4 C. organic butter
3 T. pure maple syrup
1/4 C. organic milk
1/4 C. organic half & half
1/2 tsp. ground nutmeg
Salt and pepper
1/2 C. chopped pecans


Bring a large pot of water to a boil. Add sweet potatoes and cook 12 to 15 minutes until very tender. Drain sweet potatoes in a colander. Add in the butter and maple syrup and mash for a minute. Pour in the milk and the half & half and mash until creamy.  Stir in the nutmeg and season to taste with salt and pepper.  Top with the pecans and place in a 350F oven for about 10 minutes.
