Day After Christmas Oatmeal
After eating to your heart's content on Christmas day and spending time with family late into the night, a quick, easy, healthy, make ahead breakfast is a great way to get back on track the next morning.  This recipe is simple to throw together the night before and can be made using whatever type of fruits and nuts you have on hand. After sitting in the fridge overnight, it is easy to grab while you pour yourself a cup of coffee or head out the door to go back to work! (or shop!)

Day After Christmas Oatmeal
ready for the fridge

1 C. organic old fashioned oats
1 C. plain organic Greek yogurt
1/2 C. organic milk (or soy milk)
1/2 C. frozen organic berries
1 tsp. ground cinnamon
fresh fruit, for garnish
pure maple syrup
chopped walnuts, (about 1/4 C.)

Place all the ingredients into a container with a secure lid and shake vigorously until combined well (or stir well in a bowl). Chill overnight in the refrigerator.  Serve with fresh fruit, a drizzle of maple syrup and chopped walnuts.  Makes two servings.
