Tropical Oatmeal |
I love using bananas in oatmeal as the main form of sweetener and this chilly morning was definitely one that called for a hot bowl of oatmeal. For a change however, I thought I would try a twist on my usual banana, walnut and cinnamon combination and throw in a slightly tropical twist. By adding just a small amount of coconut oil, shredded coconut and some chia seeds for texture, I created this delicious, nutritious, tropical delight. It was too good not to share!! Now if only I was eating it in the tropics too!!
Tropical Oatmeal
oats, chia, banana, cinnamon, coconut & walnuts |
1/2 C. organic oats (regular or quick)
1 C. organic plain soy milk
2 tsp. organic virgin coconut oil
2 T. organic shredded unsweetened coconut
2 T. finely diced walnuts
1 1/2 bananas, mashed
1/4 C. soaked chia seeds
1 tsp. ground cinnamon
Cook the oats and milk in a microwave safe dish according to package instructions. Stir in the coconut oil until blended through. Add in all the other ingredients and reheat for about a minute if necessary. Serve with a side of sliced kiwi!
Breakfast is served! |
