Guinness Cupcakes

Dark Chocolate Guinness Cupcakes
with Baileys Cream Cheese Frosting
Happy St. Patrick's Day!  I actually made these amazing cupcakes last year for St. Paddy's day, but never got around to finishing this post until the holiday had long since past, so I was waiting until this year to share with everyone.  I am sure most of you have seen recipes like this circulating in the previous days and weeks on social media, and I am sure there are lots of different ways to make Irish liquor infused treats.  This recipe of course uses mostly organic ingredients, a lot of whole wheat flour, high protein Greek yogurt, and antioxidant rich dark cocoa powder.  Of course there is a ton of sugar in the frosting, which is honestly so good you could eat it with a spoon, but this is a dessert after all.  For a holiday.  And they go great with a strong beer, or an Irish coffee!  May the luck of the day be with you all!!


Dark Chocolate Guinness Cupcakes
with Baileys Cream Cheese Frosting
some ingredients

Cake
1 C. + 1 T. organic butter
1 C. Guinness beer
2/3 C. dark cocoa powder
1 3/4 C. organic white sugar
2/3 C. full fat Greek yogurt
2 organic eggs
1 T. pure vanilla extract
1 1/2 C. organic whole wheat pastry flour
1/2 C. organic white flour
2 1/2 tsp. baking soda

Melt the butter and the Guinness together in a saucepan over low heat. Whisk in the cocoa powder and the sugar and then remove from the stove. Beat together the yogurt, eggs, and vanilla in a separate bowl until combined, and then add to the beer mixture. Whisk in the flours and baking soda until combined. Pour the batter into a greased and lined muffin tin and bake at 350°F for 20 – 25 minutes.


Frosting
1/2 C. organic butter at room temperature
8 oz. organic cream cheese, at room temperature
3 -4  C. organic powdered sugar
1/4 C. Baileys Irish Cream

Cream the butter and cream cheese together until well mixed. Add in the sugar alternately with the Baileys and mix together for about 5 minutes, until the icing is light and fluffy. Top with green sprinkles, if desired.
