recipe of my coconut oil pie crust

ounces unsweetened organic chocolate
2 C. organic white sugar
1 C. organic butter
1 C. organic butter

T. instant espresso
1
tsp. organic chocolate extract

organic eggs

T. dark cocoa powder
In a medium saucepan,
melt the chocolate, sugar and butter together over low heat. Stir frequently
until the mixture is smooth. Remove from heat and allow to cool slightly, about
5 minutes. Stir in the instant espresso and the chocolate extract. In a large
bowl, beat the eggs together for about 1 minute. Beat in the cocoa until
incorporated (might look a bit lumpy), then slowly add the chocolate mixture until well blended. Pour
the filling into the pie crust and bake at 375F for 25-30 minutes, until just
set.
